Mint Chocolate Chip Brownies

Ingredients

Brownies

  • 1/2 cup almond flour
  • 1/2 tsp baking soda
  • 1/3 cup santabarbarachocolate cacao powder
  • 2 flax eggs
  • 1/4 tsp sea salt
  • 1/3 cup maple syrup
  • 1/2 cup coconut sugar
  • 1/4 cup melted coconut oil
  • 3/4 cup chocolate chips
  • 1 tsp mint extract
  • 1/3 cup cashew or almond butter

Whip topping

  • 1 container coco whip
  • 1/2 tsp mint extract
  • 1/2-1 tsp spirulina or matcha
  • 1/3 cup chocolate chips

Preparation

  1. Preheat oven to 350°F and line an 8x8 inch pan with parchment paper.

  2. Melt chocolate and coconut oil together until smooth.

  3. Add cashew or almond butter and the remaining wet ingredients.

  4. Stir in the dry ingredients.

  5. Spread the mixture into the pan and bake for 20-22 minutes or until set.

  6. Let the brownies cool completely.

Whip topping

  1. Mix together coco whip, mint extract, chocolate chips, and spirulina or matcha until well combined.

  2. Spread the mixture over the cooled brownies.

  3. Place in the refrigerator until ready to eat.

Tips

  1. Do not over-bake the brownies to maintain the desired texture.

  2. Spirulina or matcha can be omitted if you prefer no color addition.
