Gluten-Free Sugar Cookies

Ingredients

  • 2 cups almond flour
  • 1/4 cup all purpose flour (used gluten-free 1:1 baking flour)
  • 1/2 cup granulated sugar (used coconut sugar)
  • 1 tsp. baking powder
  • 1 egg
  • 1/4 cup milk (used almond milk)
  • 3 tbsp. melted butter
  • 1 tsp. vanilla extract

Preparation

  1. Preheat oven to 350F and line a baking sheet with parchment paper.

  2. In a mixing bowl, whisk together the wet ingredients, then stir in the dry ingredients to form the dough.

  3. Coat your countertop with a little extra all-purpose flour and roll out the dough.

  4. Use a cookie cutter or small cup to cut out the cookies and place them on the baking sheet.

  5. Bake for 10 minutes, then let the cookies cool on a cooling rack.

Optional finishing

  1. Optionally, ice the cookies with white chocolate and sprinkles.
