Gluten-Free Sugar Cookies
Ingredients
- 2 cups almond flour
- 1/4 cup all purpose flour (used gluten-free 1:1 baking flour)
- 1/2 cup granulated sugar (used coconut sugar)
- 1 tsp. baking powder
- 1 egg
- 1/4 cup milk (used almond milk)
- 3 tbsp. melted butter
- 1 tsp. vanilla extract
Preparation
Preheat oven to 350F and line a baking sheet with parchment paper.
In a mixing bowl, whisk together the wet ingredients, then stir in the dry ingredients to form the dough.
Coat your countertop with a little extra all-purpose flour and roll out the dough.
Use a cookie cutter or small cup to cut out the cookies and place them on the baking sheet.
Bake for 10 minutes, then let the cookies cool on a cooling rack.
Optional finishing
Optionally, ice the cookies with white chocolate and sprinkles.
