Peanut Butter Cup Cookies
Ingredients
- 2 cups almond flour
- 1/4 cup all purpose flour (used Bob's Red Mill GF baking flour)
- 1/2 cup coconut sugar
- 1 tsp. baking powder
- 1 egg
- 1/4 cup peanut butter
- 1/4 cup almond milk
- sprinkles
- Trader Joe's dark chocolate peanut butter cups
Preparation
Preheat oven to 350°F and spray or line a baking sheet.
In a large bowl, whisk together the dry ingredients and in a small bowl, whisk together the wet ingredients.
Pour the wet ingredients into the dry and stir until well combined.
Use a cookie scoop to make 15-20 cookies, then press the peanut butter cups into the centers.
Bake for 10 minutes.
After baking, add Christmas sprinkles on top.
