Fluffy Confetti Cupcakes with White Chocolate and Sprinkles
Ingredients
- 1 cup all purpose flour
- 1/2 cup coconut sugar
- 1 tsp baking powder
- 1/3 cup white chocolate chips
- 3-4 tbsp sprinkles
- 1/4 cup oil
- 1/2 cup almond milk
- 1 egg
Preparation
Preheat oven to 350F and spray or line a cupcake pan.
In a large bowl, whisk together the flour, sugar, and baking powder, then stir in the chocolate chips and sprinkles.
In a small bowl, whisk together the oil, milk, and egg.
Pour the wet ingredients into the dry and stir until well combined.
Scoop the batter into the cupcake pan and bake for 16-18 minutes.
Notes
This recipe makes 7 large cupcakes.
Top with frosting and sprinkles for serving.
