Cookies and Cream Cake Bars
Ingredients
- 1 1/2 cups almond flour
- 1/2 cup all purpose flour (used Bob's Red Mill 1:1 gluten free baking flour)
- 5 cookies + extra for topping (used Trader Joe's gluten-free Joe Joe's)
- 1 tsp. baking powder
- 1/2 cup coconut sugar
- 1/2 cup almond milk
- 2 eggs
Preparation
Preheat oven to 350F and spray or line an 8x8 baking dish.
In a large bowl, whisk together the dry ingredients and crushed cookies, and in a small bowl, whisk together the wet ingredients.
Pour the wet ingredients into the dry and stir until well combined.
Spread the batter into the 8x8 pan and bake for 23 minutes. Let it cool slightly before topping with vanilla frosting and cookies.
