Fluffy Orange Muffins with Cranberries and Nuts
Ingredients
- 1/4 cup fresh orange juice
- 1/4 cup almond milk
- 2 eggs
- 1/2 cup coconut sugar
- 1 cup all purpose flour
- 1/2 cup almond flour
- 1 tsp. baking powder
Optional add-ins
- dried cranberries
- macadamia nuts
Preparation
Preheat oven to 350F and spray or line a muffin tin or mini muffin tin.
In a small bowl, whisk together the wet ingredients.
In a large bowl, whisk together the dry ingredients and stir in the dried cranberries and macadamia nuts.
Pour the wet ingredients into the dry and stir until well combined.
Scoop batter into the muffin tin and bake normal muffins for 18 minutes or mini muffins for 12 minutes.
Tips
This recipe makes 10 normal sized muffins or 19-20 mini muffins.
Perfect for a grab and go breakfast or snack.
