Baked Carrot Cake Loaf

Ingredients

  • 1/3 cup plain or vanilla yogurt
  • 1/4 cup milk (almond milk suggested)
  • 2 eggs
  • 1/2 cup coconut sugar
  • 1/2 cup all purpose flour (gluten-free suggested)
  • 1 cup almond flour
  • 1 tsp baking powder
  • 3/4 cup finely diced carrots
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg

Preparation

  1. Preheat oven to 350°F and grease or line a loaf pan.

  2. In a large mixing bowl, whisk together the milk, eggs, and yogurt, then stir in the dry ingredients and carrots.

  3. Pour the batter into the loaf pan and bake for 35 minutes. Let cool before removing from the pan and topping with icing made from powdered sugar mixed with a little water.
