Peanut Butter Chocolate Chip Cookies

Ingredients

  • 3/4 cup all purpose flour {i used @bobsredmill gluten free 1:1 flour}
  • 2/3 cup almond flour
  • 1/3 cup granulated sugar {i used coconut sugar}
  • 1 tsp. baking powder
  • 1/4 cup creamy peanut butter
  • 1/2 cup almond milk
  • 1 egg
  • 1/4 cup chocolate chips {i used @enjoylifefoods mini chocolate chips}

Preparation

  1. Preheat oven to 350F and spray or line a mini muffin tin.

  2. In a mixing bowl, whisk together the dry ingredients and in a small bowl whisk together the wet ingredients.

  3. Pour the wet ingredients into the dry and stir until combined; dough will be wet.

  4. Scoop the batter onto the baking sheet; makes 11 cookies; bake for 10-13 minutes.

  5. Use a normal sized cookie scoop for fluffy results; consider making mini cookies next time.
