Peanut Butter Chocolate Chip Cookies
Ingredients
- 3/4 cup all purpose flour {i used @bobsredmill gluten free 1:1 flour}
- 2/3 cup almond flour
- 1/3 cup granulated sugar {i used coconut sugar}
- 1 tsp. baking powder
- 1/4 cup creamy peanut butter
- 1/2 cup almond milk
- 1 egg
- 1/4 cup chocolate chips {i used @enjoylifefoods mini chocolate chips}
Preparation
Preheat oven to 350F and spray or line a mini muffin tin.
In a mixing bowl, whisk together the dry ingredients and in a small bowl whisk together the wet ingredients.
Pour the wet ingredients into the dry and stir until combined; dough will be wet.
Scoop the batter onto the baking sheet; makes 11 cookies; bake for 10-13 minutes.
Use a normal sized cookie scoop for fluffy results; consider making mini cookies next time.
