Peanut Butter Cup Mini Muffins
Ingredients
- 2/3 cup almond flour
- 3/4 cup all purpose flour {I used GF}
- 1 tsp. baking powder
- 1/3 cup coconut sugar
- 1/4 cup creamy peanut butter
- 1/2 cup almond milk
- 1 egg
- Mini PB cups
Preparation
Preheat oven to 350F and spray or line a mini muffin tin.
Put all of the ingredients into a high-powered blender or food processor and blend until creamy, with wet ingredients going in first.
Scoop the batter into the muffin tin, which makes 24 mini muffins, press a PB cup in the middle of each, and bake for 8-10 minutes.
