Peanut Butter Cup Mini Muffins

Ingredients

  • 2/3 cup almond flour
  • 3/4 cup all purpose flour {I used GF}
  • 1 tsp. baking powder
  • 1/3 cup coconut sugar
  • 1/4 cup creamy peanut butter
  • 1/2 cup almond milk
  • 1 egg
  • Mini PB cups

Preparation

  1. Preheat oven to 350F and spray or line a mini muffin tin.

  2. Put all of the ingredients into a high-powered blender or food processor and blend until creamy, with wet ingredients going in first.

  3. Scoop the batter into the muffin tin, which makes 24 mini muffins, press a PB cup in the middle of each, and bake for 8-10 minutes.
