Fluffy Peanut Butter Cup Mini Muffins

Ingredients

  • 2/3 cup almond flour
  • 3/4 cup all-purpose flour (gluten-free option)
  • 1 tsp. baking powder
  • 1/3 cup granulated sugar (coconut sugar)
  • 1/4 cup creamy peanut butter
  • 1/2 cup almond milk
  • 1 egg
  • Peanut butter cups

Preparation

  1. Preheat the oven to 350°F (175°C) and prepare a mini muffin tin by spraying or lining it.

  2. In a high-powered blender, combine all the ingredients, starting with the wet ingredients (peanut butter, almond milk, egg).

  3. Blend the ingredients until you achieve a creamy consistency.

  4. Scoop the batter into the mini muffin tin, filling each cup about two-thirds full.

  5. Press a peanut butter cup into the center of each muffin.

  6. Bake the muffins for 8-10 minutes, or until they are golden and a toothpick inserted into the center comes out clean.

  7. Remove the muffins from the oven and allow them to cool slightly before transferring them to a wire rack to cool completely.
