Fluffy Peanut Butter Cup Mini Muffins
Ingredients
- 2/3 cup almond flour
- 3/4 cup all-purpose flour (gluten-free option)
- 1 tsp. baking powder
- 1/3 cup granulated sugar (coconut sugar)
- 1/4 cup creamy peanut butter
- 1/2 cup almond milk
- 1 egg
- Peanut butter cups
Preparation
Preheat the oven to 350°F (175°C) and prepare a mini muffin tin by spraying or lining it.
In a high-powered blender, combine all the ingredients, starting with the wet ingredients (peanut butter, almond milk, egg).
Blend the ingredients until you achieve a creamy consistency.
Scoop the batter into the mini muffin tin, filling each cup about two-thirds full.
Press a peanut butter cup into the center of each muffin.
Bake the muffins for 8-10 minutes, or until they are golden and a toothpick inserted into the center comes out clean.
Remove the muffins from the oven and allow them to cool slightly before transferring them to a wire rack to cool completely.
