Gluten-Free Fruit Pizza with Coconut Frosting
Ingredients
- 2 cups almond flour
- 1/4 cup all-purpose flour (gluten-free 1:1 baking flour)
- 3/4 cup granulated sugar (coconut sugar)
- 1 tsp baking powder
- 1 egg
- 1 tsp vanilla extract
- 1/4 cup melted butter
- Lots of diced fruit for topping
Frosting
- 1/4 cup unsweetened coconut cream
- 1/4 tsp vanilla extract
- 1 cup powdered sugar
Preparation
Preheat the oven to 350F and line a baking dish with parchment paper.
In a mixing bowl, whisk together the egg, vanilla extract, and melted butter, then stir in the dry ingredients and use your hands to form a dough.
Press the dough into the baking dish and bake for 18 minutes.
Combine the frosting ingredients and let it sit in the fridge while the cookie crust cools.
Once the crust is cooled, add the frosting and fruit.
Tips
Use an 11x7 baking dish for a thin cookie crust.
The dough may look dark if using coconut sugar.
Use a hand mixer when combining frosting ingredients.
