Mini Funfetti Slice-And-Bake Cookies
Ingredients
- 1/2 cup (1 stick / 114g) unsalted butter, room temp
- 3/4 cup (150g) granulated sugar
- 1 large egg, room temp
- 2 tsp vanilla extract
- 1/4 tsp almond extract (optional)
- 1 1/2 cups (190g) all purpose flour
- 1 tsp cornstarch
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 -1/3 cup colorful jimmies sprinkles
Preparation
Cream together the butter and sugar in a mixing bowl until light and fluffy.
Add the egg, vanilla extract, and almond extract if using, then mix well.
In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture and stir until combined.
Fold in the sprinkles to distribute evenly.
Shape the dough into a log, wrap it in plastic wrap, and chill in the refrigerator for at least 1 hour.
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Slice the chilled dough into thin rounds and place them on the prepared baking sheet.
Bake for 8-10 minutes or until the edges are lightly browned.
Remove from the oven and add more sprinkles if desired, then allow to cool.
