Chocolate Cookie Pie with Nutella Filling
Ingredients
- 5 tablespoons (heaping) cold butter OR margarine
- 5 tablespoons brown sugar
- 5 tablespoons granulated sugar
- 1 egg
- 200g all-purpose flour (approx. 1 3/4 cups)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 100g chopped chocolate OR chocolate chips
- 300g Nutella
Preparation
Beat cold butter and sugars in a mixer for 5 minutes
Add egg, vanilla extract, and salt; beat for 2 minutes
Add flour and baking soda; beat until combined
Add chocolate and mix using a spatula
Chill the dough in the refrigerator for 20 minutes
In a 16cm diameter pan, place the dough and spread on the bottom and sides of the pan, reserving some dough for the top
Place Nutella in the center and spread
Cover the Nutella with small pieces of dough
Do not fill the pan completely as the pie will rise slightly
Bake at 180Β°C for 40 minutes
Let cool slightly, then unmold and serve
