Easy No-Chill Sugar Cookies
Ingredients
- 1 cup of butter
- 1.5 cups of granulated sugar
- 1 medium egg
- 1.5 tsp vanilla extract
- 0.5 tsp almond extract
- 2.75 cups plain flour
- 1 tsp baking powder
- 1 tsp salt
Preparation
Preheat oven to gas mark 4/180°C/350°F.
Cream butter and sugar together using a stand mixer or handheld mixer until light and airy. Add the egg and extracts, beat until smooth.
Combine flour, baking powder and salt together, add to the butter mixture one cup at a time, mix after each addition. Do not chill dough.
Divide dough into two balls and roll out onto a floured surface or on a piece of clingfilm to approximately 12 inches wide and 1/4 inch thick.
Dip cookie cutters in flour and cut out shapes. Bake on flat trays lined with greaseproof paper; bake large or medium cookies for 10 to 12 minutes, small cookies for 7 to 9 minutes, or until edges are lightly browned.
Allow cookies to cool completely before using royal icing to decorate.
