Homemade Stamped Butter Cookies

Ingredients

  • 1 cup butter at room temperature
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 large egg
  • 3 1/2 cups flour

Preparation

  1. Set the oven rack in the middle and preheat the oven to 180°C

  2. Prepare shallow baking trays and line them with parchment paper

  3. In a mixer bowl, place the butter and sugar, attach the whisk, and mix on medium speed for several minutes until the butter is light in color

  4. Add the vanilla, almond extract, and egg, then mix on medium speed until the egg is fully incorporated

  5. Add the flour, attach the paddle, and mix on low speed until a soft, cohesive dough forms

  6. On a floured surface, roll out half of the dough to about 4mm thick, use a decorative stamper to imprint the design, cut out circles with a cookie cutter of the same diameter, repeat with the remaining dough, and place the cookies on the prepared trays, leaving about 1cm space between them

  7. Bake the stamped cookies for 8 to 10 minutes until the bottoms are golden brown
