Simple Date Ma'amoul Cookies

Ingredients

  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 small pinch salt
  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup date paste

Preparation

  1. Preheat the oven to 180 degrees, set the middle rack, and prepare shallow baking sheets.

  2. Sift the flour, baking powder, and salt on parchment paper and set aside.

  3. In the mixer bowl, place the butter and sugar, attach the whisk attachment, beat for a minute, add egg yolks and vanilla, and beat until light in color.

  4. Add the flour, attach the paddle attachment, and mix for 1-2 minutes until a cohesive dough forms.

  5. Divide the dough into small balls, make a cavity in each ball like kibbeh, place a piece of date, shape into a ball, put in ma'amoul mold, press to take the shape, and invert the mold to release the ma'amoul piece.

  6. Place the ma'amoul pieces on the baking sheets with space between them.

  7. Bake in the oven for 12 minutes until golden brown, and leave in the sheets until completely cool.
