Cinnamon Cookies with Jam

Ingredients

  • 2 4/3 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon cinnamon
  • 4/3 cup softened butter
  • 1 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • apricot jam or powdered sugar

Preparation

  1. Preheat the oven to 180°C and set the middle rack.

  2. On a piece of parchment paper or in a deep bowl, sift the flour, baking powder, and salt.

  3. In the mixer bowl, place the butter and sugar, attach the whisk attachment and run on medium speed until the mixture is creamy and crumbly in texture.

  4. Add an egg and run on medium speed until the egg disappears, then add the second egg and vanilla and run on medium speed until the egg disappears.

  5. Remove the whisk attachment and attach the paddle attachment.

  6. Add the flour and cinnamon mixture, run on low speed until dough forms, then on medium speed for one minute.

  7. Place the dough on the table and shape it into a smooth disk, cover with plastic wrap and refrigerate for about an hour.

  8. Preheat the oven to 180°C and set the middle rack.

  9. Prepare shallow-rimmed baking sheets and cookie cutters according to your preferred size and shape.

  10. Take a portion of the dough and place it between two sheets of parchment paper, use a rolling pin to roll the dough to a thickness of 4 mm.

  11. Using the cutter, cut the dough into an equal number of full pieces and pieces with a hole in the middle.

  12. Place the cookie pieces on the baking sheets, leaving 1 inch between each piece.

  13. Bake the cookies for 10 minutes and let them cool completely before assembling.

  14. Using a wide knife, place a small amount of jam on the full cookie piece, place the piece with the hole in the middle on top of the jam and press lightly to stick.

  15. Sprinkle a little powdered sugar on the cookies and place on a serving plate.

Tips

  1. You can store the cookies in an airtight container for several days.
