Vanilla Almond Butter Cookies

Ingredients

  • 1 cup almond slices
  • 1 3/4 cups flour
  • 1 small pinch salt
  • 1 cup soft butter
  • 1/2 cup powdered sugar
  • 1 teaspoon liquid vanilla

Preparation

  1. Place almonds, flour, and salt in a food processor and blend until smooth. Set aside.

  2. In a mixer bowl, combine butter, sugar, and vanilla. Use the whisk attachment to beat on medium speed until creamy.

  3. Switch to the paddle attachment, add the flour mixture, and mix on low speed until a smooth dough forms. Do not overmix.

  4. Wrap the dough in plastic wrap and refrigerate for about one hour.

  5. Preheat the oven to 170°C and prepare rimmed baking sheets.

  6. Remove dough from refrigerator and let it sit for a few minutes to soften.

  7. Form dough into small balls and place them spaced apart on the baking sheet.

  8. Bake for 10-12 minutes until set, ensuring they do not darken.

  9. Remove from oven and immediately sprinkle with fine powdered sugar.

  10. After cooling for a few minutes, roll the cookies in fine powdered sugar to coat generously.
