Coconut Biscuits with Vanilla and Sugar Coating

Ingredients

  • 1 cup flour
  • 1 cup starch
  • 1 pinch salt
  • 1 cup coconut
  • 1 cup butter at room temperature
  • 1 cup powdered sugar
  • 1 egg
  • 1 teaspoon liquid vanilla

Preparation

  1. Set the middle rack in the oven and preheat to 180°C.

  2. Prepare shallow trays and line them with parchment paper.

  3. Get a piping bag and fit it with a 1 cm plain tip.

  4. Sift the flour, starch, and salt. Add the coconut and mix, then set aside.

  5. In a bowl, place the butter and use an electric mixer to beat it for a few minutes until fluffy.

  6. Add the sugar and beat until dissolved and the mixture lightens in color.

  7. Add the egg and vanilla, and continue beating until incorporated.

  8. Add the flour mixture and stir with a spoon to make a soft dough.

  9. Put the dough in the piping bag and pipe onto the trays in small discs about 1 inch in size, leaving space between them. Smooth the tops if needed.

  10. Bake for 10-12 minutes until golden.

  11. For the coating, mix a little coconut and sugar in a bowl.

  12. While the biscuits are still warm, coat them in the mixture.

  13. Let them cool and serve, or serve plain without coating.
