Pistachio and Date Cookies
Ingredients
- 2 1/2 cups flour
- 1/2 cup starch
- 1/2 cup powdered sugar
- 1 cup soft butter
- 1 teaspoon vanilla extract
- 1/4 cup milk
Filling
- 1/2 cup ground pistachio
- 1/2 cup date paste
- 1 tablespoon soft butter
- 1/4 teaspoon ground cardamom
Glaze
- Egg yolk
Preparation
Place the rack in the middle of the oven and preheat the oven to 180°C. Prepare shallow baking sheets and line them with parchment paper.
In the mixer bowl, combine flour, starch, sugar, butter, and vanilla. Attach the paddle attachment and mix on medium speed until a breadcrumb-like mixture forms. Gradually add milk until a cohesive dough forms.
For the filling, in a small pot, combine ground pistachio, date paste, butter, and cardamom. Cook over medium heat, stirring with a wooden spoon until mixed. Let the filling cool and shape into small balls.
Take walnut-sized pieces of dough, shape into disks, place a filling ball in each, seal into smooth balls, and place on the baking sheet with 1 inch between them. Use a fork to press and decorate the tops.
Brush the disks with egg yolk using a brush.
Bake for 15 to 20 minutes until golden brown.
