Anise and Caraway Petit Fours

Ingredients

  • 3/4 cup soft butter
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground anise
  • 1/4 teaspoon caraway
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups flour

Preparation

  1. Place the oven rack in the middle and preheat the oven to 180°C. Prepare shallow-edged baking sheets.

  2. In the mixer bowl, place the butter and attach the beater paddle. Mix on medium speed until the butter is fluffy.

  3. Add the sugar, baking powder, anise, and caraway. Mix on medium speed until well combined.

  4. Add the egg yolk and vanilla, and mix until fully incorporated.

  5. Gradually add the flour until a soft dough forms.

  6. Use a cookie press fitted with a flower-shaped disk and fill it with the dough.

  7. Press the dough onto the baking sheet to form flower-shaped petit fours, leaving 1 inch between each.

  8. Bake for 6 minutes or until the bottoms are golden brown.

  9. Remove from the oven and use a wide metal spatula to transfer the petit fours to a wire rack to cool completely before serving.
