Custard-Filled Donuts
Ingredients
Dough
- 3 3/4 cups flour
- 2 1/4 tablespoons fine granulated sugar
- 1 tablespoon instant yeast
- 1/2 cup soft butter
- 1/2 tablespoon baking powder
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/2 tablespoons milk
- 1/4 teaspoon salt
- 1 cup warm water
Custard
- 1 cup milk
- 1 teaspoon vanilla extract
- 4 large egg yolks
- 3 tablespoons fine granulated sugar
- 4 teaspoons flour
- 5 teaspoons cornstarch
- 1 teaspoon soft butter
Decoration
- Chocolate sauce or powdered sugar
Frying
- Oil
Preparation
Custard
Heat the milk in a stainless steel pot.
In a wide bowl, place the egg yolks, vanilla, and sugar, and whisk with a hand whisk until light in color.
Add the flour and cornstarch, and mix well.
Pour the hot milk over the egg mixture and stir to combine.
Return the mixture to the pot, reduce heat, and stir with a wooden spoon for 4 minutes until thickened.
Place in a deep glass dish, cover with plastic wrap, and refrigerate to cool.
Donut
In a mixer bowl, combine flour, sugar, yeast, baking powder, and salt, and mix with a dough hook for a few seconds.
Add the remaining ingredients and knead until a smooth dough forms.
Place the dough in an oiled bowl, cover, and let rise in a warm place until doubled in size.
Cut the dough into medium-sized balls, cover, and let rise again until doubled.
In a deep frying pan, heat oil and fry the donuts on medium heat for 5-6 minutes, stirring continuously until golden brown.
Remove from oil and place on paper towels to cool completely.
Using a serrated knife, cut open the donuts without separating them and stuff with 2 tablespoons of custard.
Place on a serving dish and garnish with chocolate sauce or powdered sugar.
