Cherry Tart with Almond Filling

Ingredients

  • 1 1/4 cups flour
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 1/2 cup soft butter
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/3 cup cherry jam

Filling

  • 1 cup almonds
  • 2/3 cup sugar
  • 1/2 cup soft butter
  • 1/2 teaspoon almond extract
  • 2 large eggs

Preparation

  1. Set the middle rack in the oven and preheat to 180°C

  2. Prepare a 9-inch tart pan with a removable bottom

  3. In a food processor with the metal blade, place flour, sugar, baking powder, and butter and process on medium speed until mixture resembles breadcrumbs

  4. Add the egg and vanilla and process on pulse until dough forms

  5. Press the dough into the tart pan to cover the bottom and sides, spread the cherry jam over it, and chill in the refrigerator for 30 minutes

  6. For the filling, in a food processor place almonds, sugar, butter, almond extract, and eggs and process on medium speed until smooth, then spread the mixture over the chilled dough in the pan

  7. Bake in the preheated oven for 30 to 35 minutes until the tart is golden brown

  8. Remove from the oven and cool on a wire rack before serving
