Mini Basbousa with Cheese
Ingredients
- 1 cup fine semolina
- 1 teaspoon baking powder
- 1/2 cup sugar
- 1 tablespoon clotted cream
- 3 tablespoons cottage cheese
- 1/2 cup oil
- 1 large egg
- 1 teaspoon vanilla extract
For serving

- Sliced almonds
Preparation
Prepare mini cupcake tins with decorative paper liners
Position the oven rack in the middle and preheat the oven to 180°C
In a mixer bowl, place semolina, baking powder, sugar, clotted cream, cottage cheese, oil, egg, and vanilla, then mix on medium speed for 3 minutes until a basbousa mixture forms
Distribute the mixture into the cups, filling them two-thirds full, and sprinkle with almonds
Bake for 15 minutes or until golden brown
Remove from oven, immediately pour syrup over, allow to cool completely, then serve
