Mini Basbousa with Cheese

Ingredients

  • 1 cup fine semolina
  • 1 teaspoon baking powder
  • 1/2 cup sugar
  • 1 tablespoon clotted cream
  • 3 tablespoons cottage cheese
  • 1/2 cup oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Preparation

  1. Prepare mini cupcake tins with decorative paper liners

  2. Position the oven rack in the middle and preheat the oven to 180°C

  3. In a mixer bowl, place semolina, baking powder, sugar, clotted cream, cottage cheese, oil, egg, and vanilla, then mix on medium speed for 3 minutes until a basbousa mixture forms

  4. Distribute the mixture into the cups, filling them two-thirds full, and sprinkle with almonds

  5. Bake for 15 minutes or until golden brown

  6. Remove from oven, immediately pour syrup over, allow to cool completely, then serve
