Cherry Almond Tart
Ingredients
- 1/4 cup flour
- 1/3 cup sugar
- 1 teaspoon baking powder
- 1/2 cup soft butter
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/3 cup cherry jam
Filling
- 1 cup almonds
- 2/3 cup sugar
- 1/2 cup soft butter
- 1/2 teaspoon almond extract
- 2 large eggs
Preparation
Set the middle rack in the oven and preheat to 180 degrees Celsius.
Prepare a 9-inch tart pan with a removable bottom.
In a food processor with the metal blade attached, place the flour, sugar, baking powder, and butter and run on medium speed until the mixture resembles breadcrumbs.
Add the egg and vanilla extract and run on pulse mode until the dough forms.
Place the dough in the tart pan and press it to cover the bottom and sides, then spread the cherry jam over it and chill in the refrigerator for 30 minutes.
For the filling, in a food processor, place the almonds, sugar, butter, almond extract, and eggs and run on medium speed until a smooth mixture forms, then spread it over the dough in the pan.
Bake in the oven for 30 to 35 minutes until the tart is golden brown.
Remove from the oven and cool on a wire rack before serving.
