Traditional Cardamom Ghoriba Cookies
Ingredients
- 3/4 cup ghee
- 1/4 cup corn oil
- 1 cup powdered sugar
- 1/2 cup flour
- 1 tablespoon ground cardamom
Sugar sauce
- 1/2 cup powdered sugar
- 1 tablespoon milk
- 1/4 teaspoon ground cardamom
Garnish
- Whole cardamom seeds
Preparation
Place the oven rack in the middle and preheat the oven to 180°C.
Prepare shallow-edged baking sheets and line them with parchment paper.
In a small pot, place the ghee and corn oil and heat over medium heat until hot.
In a mixer bowl, add the ghee mixture and sugar, attach the beater, and mix on medium speed until the sugar dissolves, then add the flour and ground cardamom and mix on medium speed for 2 to 3 minutes until a soft, smooth dough forms.
Shape the dough into smooth balls of your preferred size, place them on the prepared sheets leaving about 1 cm space between them, and use your finger to press a small indentation in the center of each ball.
Bake in the preheated oven for 8 minutes and allow the cookies to cool completely.
For the sugar sauce, in a small bowl combine the powdered sugar, milk, and ground cardamom, mix with a fork until a smooth sauce forms, transfer the sauce to a piping bag, and cut a small tip off.
Fill the indentations in the cookies with the sugar sauce and garnish with whole cardamom seeds.
