Iranian Style Date and Walnut Sweet

Ingredients

  • 1 cup walnut halves
  • 3 cups dates
  • 1/2 teaspoon ground cardamom

Dough

  • 1.5 cups flour
  • 1/2 cup butter
  • 1/2 cup ghee
  • 1 teaspoon ground cardamom
  • 1 teaspoon cinnamon
  • 1/2 cup powdered sugar

Topping

  • 2 cups crushed pistachios

Preparation

  1. Set the wire rack in the middle of the oven and preheat to 180°C

  2. Place walnut halves in a shallow baking dish and bake for 10 minutes to toast, then remove and sprinkle with cardamom immediately, allowing to cool completely

  3. Use a sharp knife to cut open the dates, remove the pits, and keep them whole

  4. Stuff each date with a piece of toasted walnut and close it

  5. Prepare a 9-inch baking dish

  6. For the dough, in a thick-bottomed pot, place flour and ghee, cook over medium heat while stirring constantly until the flour toasts and becomes light brown

  7. Pour half of the dough mixture into the bottom of the dish, arrange the stuffed dates on top, and cover with the remaining dough

  8. In a small bowl, mix sugar, cardamom, and cinnamon with fingers, sprinkle the mixture over the dough and dates in the dish, then sprinkle crushed pistachios and press down firmly to adhere

  9. Cover the dish with plastic wrap and place in a cool location, not the refrigerator, to cool and set

  10. Cut the sweet into squares and serve with Arabic coffee
