Brazilian Ninho Milk Powder Doughnuts with Nutella Filling

Ingredients

Dough

  • 30 grams fresh yeast (or 10 grams dry yeast)
  • 1/2 cup sugar
  • 1/2 cup warm water
  • 4 tablespoons milk powder
  • 2 eggs
  • 1 tablespoon butter
  • 1 tablespoon oil
  • 6 cups all-purpose flour
  • 1 teaspoon salt

Assembly

  • 3 tablespoons milk powder
  • 3 tablespoons sugar
  • Milk, for dipping
  • Nutella, for filling

Preparation

Dough

  1. Dissolve the yeast, sugar, and a little warm water in a bowl

  2. Add the remaining ingredients except the flour and mix until homogeneous

  3. Gradually add the flour, stirring until the dough becomes thick

  4. Place the dough on a surface, add more flour as needed, and knead until smooth, homogeneous, and no longer sticks to the hands

  5. Let rest for 1 hour

  6. Shape into 12 balls

  7. Bake in a non-stick pan for 25 minutes at 200Β°C

Assembly

  1. Let the baked doughnuts cool completely

  2. Moisten the doughnuts in milk and then in the milk powder and sugar mixture

  3. Cut each doughnut in half and fill with Nutella
