Nutty Chunky Christmas Cookies
Ingredients
- 1 cup almond flour
- 3/4 cup brown rice flour
- 1 tsp baking powder
- Pinch of salt
- 2 - 3 tbsp maple syrup
- 1/4 cup coconut oil
- 1/2 tsp vanilla extract
- Dark chocolate chips
- Handful of walnuts
Preparation
Preheat the oven to 350°F.
Prepare and line your baking sheet with parchment paper.
Sift and stir the dry ingredients in a large mixing bowl, then add the wet ingredients while whisking with a spatula.
Form a semi-sticky, tacky dough with your hands.
Add some oil if the cookie dough is dry.
Roll the dough into a ball and divide it into smaller balls according to your preferred size.
Place the cookie balls on the lined baking sheet, spaced 2 inches apart.
Gently flatten them with the palm of your hands.
Sprinkle chopped walnuts and chocolate chips on the cookies.
Bake for 12-15 minutes or until the edges turn golden brown.
Let the baked cookies cool on the baking tray for 5 minutes.
Transfer the cookies to a wire rack to cool completely.
