Nutty Chunky Christmas Cookies

Ingredients

  • 1 cup almond flour
  • 3/4 cup brown rice flour
  • 1 tsp baking powder
  • Pinch of salt
  • 2 - 3 tbsp maple syrup
  • 1/4 cup coconut oil
  • 1/2 tsp vanilla extract
  • Dark chocolate chips
  • Handful of walnuts

Preparation

  1. Preheat the oven to 350°F.

  2. Prepare and line your baking sheet with parchment paper.

  3. Sift and stir the dry ingredients in a large mixing bowl, then add the wet ingredients while whisking with a spatula.

  4. Form a semi-sticky, tacky dough with your hands.

  5. Add some oil if the cookie dough is dry.

  6. Roll the dough into a ball and divide it into smaller balls according to your preferred size.

  7. Place the cookie balls on the lined baking sheet, spaced 2 inches apart.

  8. Gently flatten them with the palm of your hands.

  9. Sprinkle chopped walnuts and chocolate chips on the cookies.

  10. Bake for 12-15 minutes or until the edges turn golden brown.

  11. Let the baked cookies cool on the baking tray for 5 minutes.

  12. Transfer the cookies to a wire rack to cool completely.
