Fudgy Vegan and Paleo Chocolate Crinkles

Ingredients

  • 1 cup dark chocolate chips (preferably HuKitchen Gems)
  • 1 flax egg
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 1/4 cup cacao powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup shredded coconut (for coating)

Preparation

  1. Preheat the oven to 350ºF.

  2. Melt the dark chocolate chips.

  3. Stir in coconut sugar, maple syrup, flax egg, and vanilla extract.

  4. Add almond flour, cacao powder, baking soda, and salt to the mixture.

  5. Mix all the ingredients together to form a thick dough.

  6. Scoop or roll the dough into balls. If the dough is too sticky, chill it for 30 minutes before shaping.

  7. Blend the shredded coconut until it becomes super fine and powdery, but be careful not to blend for too long or at high speed, as it may turn into coconut butter.

  8. Roll each dough ball in the shredded coconut to coat it.

  9. Arrange the coated balls on a lined baking sheet, without flattening them.

  10. Bake the cookies for 10-12 minutes at 350ºF.

  11. Allow the cookies to cool before eating.
