Vegan Lemon Loaf Cake

Ingredients

  • 1/2 cup almond flour
  • 1 1/2 cups regular flour
  • 3/4 cup oat flour
  • 2/3 cup oat milk
  • 1/2 cup agave
  • 1 teaspoon baking powder
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1/3 cup unsweetened applesauce

Glaze

  • Greek yogurt or coconut yogurt
  • Maple syrup to taste
  • Lemon juice to taste
  • Lemon zest to taste

Preparation

  1. Preheat oven to 200°C.

  2. Mix all ingredients in a bowl.

  3. Transfer to a loaf tin covered with parchment paper.

  4. Bake for 1 hour.

  5. Let it cool.

  6. Spread the yogurt glaze on top.
