Vegan Lemon Loaf Cake
Ingredients
- 1/2 cup almond flour
- 1 1/2 cups regular flour
- 3/4 cup oat flour
- 2/3 cup oat milk
- 1/2 cup agave
- 1 teaspoon baking powder
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1/3 cup unsweetened applesauce
Glaze
- Greek yogurt or coconut yogurt
- Maple syrup to taste
- Lemon juice to taste
- Lemon zest to taste
Preparation
Preheat oven to 200°C.
Mix all ingredients in a bowl.
Transfer to a loaf tin covered with parchment paper.
Bake for 1 hour.
Let it cool.
Spread the yogurt glaze on top.
