Decadent Vegan Chocolate Cake

Ingredients

  • 1 cup coconut milk
  • 2 cups flour
  • 1/2 cup applesauce
  • 3/4 cup sugar (1 cup if using coconut sugar)
  • 1/3 cup cacao powder
  • 1 Tbsp apple cider
  • 1 Tbsp vanilla extract
  • 1/2 cup oil or vegan margarine
  • 1 Tbsp baking powder
  • pinch of salt

Frosting

  • 1 can thick coconut cream
  • 200 grams dark chocolate
  • 1/4 cup powdered sugar (optional)

Preparation

  1. In two separate bowls, mix the dry and wet ingredients.

  2. Mix the dry ingredients into the wet and blend well with an electric mixer.

  3. Line a round cake tray with parchment paper and grease with oil.

  4. Pour the batter into the tray and bake in a preheated oven at 180°C for 45-60 minutes. Check for doneness after 40 minutes by inserting a knife; if it comes out clean, the cake is done.

  5. While the cake is baking, prepare the frosting: Heat coconut cream in a pan over medium heat, add chopped dark chocolate, stir until melted, and add powdered sugar to taste if desired.

  6. Allow the frosting to cool completely to thicken.

  7. Once the cake is fully cooled, pour the frosting over it while still in the tray.

  8. Refrigerate for a couple of hours or overnight to set the frosting.

  9. Cut into slices and serve.

Tips

  1. The frosting sweetness may need adjustment based on the type of chocolate used.

  2. Ensure both the cake and frosting are completely cooled before assembling to achieve the best texture.
