Vegan Aquafaba Coconut Cookies

Ingredients

  • 1 can of chickpeas
  • 1/2 teaspoon baking powder
  • 80g coconut sugar
  • 200g coconut shreds
  • 1 teaspoon vanilla extract
  • 50g dark chocolate

Preparation

  1. Drain the liquid from 1 can of chickpeas and add 1/2 teaspoon of baking powder, then whisk with a hand mixer until it reaches a whipped egg whites consistency.

  2. In a separate bowl, combine the other ingredients except for the chocolate, whisk together, and add this mixture to the aquafaba, mixing well.

  3. Form small coconut balls with your hands and place them on parchment paper.

  4. Bake in the oven at 200°C for about 15 minutes until they are slightly brown on top.

  5. Melt the dark chocolate in the microwave and sprinkle it over the cookies.

  6. Enjoy this simple vegan treat.
