Vegan Gluten-Free Chocolate Orange Cookies

Ingredients

  • 1 can black beans (400g)
  • 125 g dates
  • 50 g coconut oil
  • 50 g oat flour
  • 85 g peanut butter
  • 4 tbsp orange juice
  • 4 tbsp almond milk
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp dark chocolate spread
  • 2 tbsp orange zest

Preparation

  1. Preheat the oven to 180 degrees Celsius.

  2. Mix all ingredients in a food processor until a sticky mixture forms.

  3. Add extra oat flour if the mixture is too sticky.

  4. Roll the dough into balls, flatten them on a baking sheet, and bake for 15 minutes.

Notes

  1. These cookies are perfect as a snack or dessert.

  2. The recipe is fully vegan and gluten-free, and can be prepared in about 20 minutes.
