Vegan Gluten-Free Chocolate Orange Cookies
Ingredients
- 1 can black beans (400g)
- 125 g dates
- 50 g coconut oil
- 50 g oat flour
- 85 g peanut butter
- 4 tbsp orange juice
- 4 tbsp almond milk
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tbsp dark chocolate spread
- 2 tbsp orange zest
Preparation
Preheat the oven to 180 degrees Celsius.
Mix all ingredients in a food processor until a sticky mixture forms.
Add extra oat flour if the mixture is too sticky.
Roll the dough into balls, flatten them on a baking sheet, and bake for 15 minutes.
Notes
These cookies are perfect as a snack or dessert.
The recipe is fully vegan and gluten-free, and can be prepared in about 20 minutes.
