Vegan Caffeinated Chocolate Chip Cookies

Ingredients

  • 1/2 cup softened vegan butter (Earth Balance)
  • 1/2 cup coconut sugar (Wholesome Sweet)
  • 1 tsp vanilla
  • 1/4 cup almond milk
  • 1 1/2 cup all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 6 caramel chocolates (Awake Chocolate, roughly chopped)
  • 2 tsp flaky salt (Maldon Salt)

Preparation

  1. Preheat the oven to 350 degrees.

  2. Beat together the wet ingredients in a large bowl.

  3. Whisk in the dry ingredients.

  4. Fold in the chocolate chunks.

  5. Drop dough balls onto a cookie sheet; this makes about 12 cookies.

  6. Bake for 13 minutes.

  7. Sprinkle with flaky salt.
