Nutritious Vegan Snicker Cake

Ingredients

  • 4 ripe bananas
  • 1 cup almond milk
  • 2 1/4 cups buckwheat flour
  • 1/4 cup cocoa powder
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp apple cider vinegar
  • 10 soft dates
  • 1/2 cup peanuts

Preparation

  1. Preheat the oven to 180 degrees

  2. Blend 3 bananas, almond milk, apple cider vinegar, and dates if using, then transfer to a bowl

  3. Add the remaining ingredients and mix to form a stiff batter, then pour into a cake pan

  4. Cut the fourth banana in half lengthwise and place on top of the batter, then top with extra peanuts

  5. Bake in the oven for 1 hour until done, then let cool
