Nutritious Vegan Snicker Cake
Ingredients
- 4 ripe bananas
- 1 cup almond milk
- 2 1/4 cups buckwheat flour
- 1/4 cup cocoa powder
- 1/2 cup almond flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tbsp apple cider vinegar
- 10 soft dates
- 1/2 cup peanuts
Preparation
Preheat the oven to 180 degrees
Blend 3 bananas, almond milk, apple cider vinegar, and dates if using, then transfer to a bowl
Add the remaining ingredients and mix to form a stiff batter, then pour into a cake pan
Cut the fourth banana in half lengthwise and place on top of the batter, then top with extra peanuts
Bake in the oven for 1 hour until done, then let cool

This cake is ideal as a snack, dessert, or treat and is ready in 1 hour
