Gluten-Free Vegan Carrot Cake
Ingredients
Wet mixture
- 1/2 cups coconut sugar
- 1/4 cup maple syrup
- 1/2 cup canola oil
- 2 flax eggs
- 1/2 teaspoon vanilla extract
Dry mixture
- 1 cup gluten-free all-purpose flour
- 1/4 cup almond flour
- 1/2 teaspoon baking soda
- 1 tsp baking powder
- Pinch of salt
- 1/2 and 1/4 tsp cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1 cup grated carrots
- 1/2 dried grapes
- 1/4 chopped pecans
Preparation
Preheat oven to 350°F.
Mix all the ingredients in bowl one until smooth.
Combine the ingredients of bowl two into bowl one.
Mix gently until well combined, then fold in the pecans and dried grapes.
Pour the batter into an 8x8-inch baking pan and bake for 35 minutes.
