Vegan Gluten-Free Pumpkin Banana Bread

Ingredients

  • 200g self raising flour, sifted
  • 100g oats
  • 75g natural sweetener of choice
  • 200g over ripe bananas, mashed
  • 200g pumpkin purée
  • 60ml any milk
  • 1 tbsp apple cider vinegar
  • 2 tbsp ground cinnamon
  • 1 tbsp baking powder
  • 2 tsp lemon juice
  • 1/2 tsp salt
  • Choc Shot Orange Spice by sweetfreedomuk

Preparation

  1. Preheat oven to 180C/350F/gas mark 4.

  2. Mix milk and cider vinegar and leave for five minutes to curdle.

  3. Put all dry ingredients in a large bowl and mix until smooth.

  4. Add banana, pumpkin and lemon juice to the bowl and mix until smooth.

  5. Add milk mixture to the bowl and stir.

  6. Line a loaf tin with baking paper and pour in mixture.

  7. Oven bake for 35 minutes or until golden and an inserted knife comes out clean.

  8. Drizzle Choc Shot Orange Spice by sweetfreedomuk on top.

Notes

  1. This bread tastes like cake and is super scrumptious with Choc Shot Orange Spice drizzled on top.
