Vegan Cassava Flour Banana Bread
Ingredients
- 2 cups cassava flour
- 3 ripe bananas
- 3 flax eggs (3 tbsp ground flaxseed mixed with 9 tbsp water)
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 tsp vanilla
Optional
- walnuts for topping
Preparation
Preheat oven to 350F.
In a large bowl, mash the bananas.
Add the remaining ingredients and stir to combine.
Pour into a parchment lined loaf dish and top with walnuts (optional).
Bake for 35-45 minutes, or until an inserted toothpick comes out clean.
Slice and enjoy.

Cassava flour is gluten, grain, and nut-free and makes delicious banana bread.
