Vegan Cassava Flour Banana Bread

Ingredients

  • 2 cups cassava flour
  • 3 ripe bananas
  • 3 flax eggs (3 tbsp ground flaxseed mixed with 9 tbsp water)
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp vanilla

Optional

  • walnuts for topping

Preparation

  1. Preheat oven to 350F.

  2. In a large bowl, mash the bananas.

  3. Add the remaining ingredients and stir to combine.

  4. Pour into a parchment lined loaf dish and top with walnuts (optional).

  5. Bake for 35-45 minutes, or until an inserted toothpick comes out clean.

  6. Slice and enjoy.

Notes

  1. Cassava flour is gluten, grain, and nut-free and makes delicious banana bread.
