Vegan Banana Spelt Waffles
Ingredients
- 3 medium ripe bananas
- 300 g spelt flour
- 2 tsp baking powder
- Pinch of salt
- 300 ml plant-based milk
- Vegan butter, for greasing the waffle iron
Optional
- Ground vanilla or cinnamon, to taste
Preparation
Peel and mash bananas with a fork until smooth, mix with spelt flour, baking powder, optional vanilla or cinnamon, and salt, add plant-based milk, and whisk to a smooth batter; let rest for 5 minutes
Preheat the waffle iron to low or medium heat and brush with vegan butter
Scoop the batter onto the center of the hot waffle iron, filling about three-quarters of the surface, close the lid, and bake for 3-4 minutes
Stack the cooked waffles on a plate to keep warm and serve with fresh berries, powdered sugar, or maple syrup if desired

Yields about 5 heart-shaped waffles
Store cooled waffles in the refrigerator for up to 3 days
