Vegan Banana Spelt Waffles

Ingredients

  • 3 medium ripe bananas
  • 300 g spelt flour
  • 2 tsp baking powder
  • Pinch of salt
  • 300 ml plant-based milk
  • Vegan butter, for greasing the waffle iron

Optional

  • Ground vanilla or cinnamon, to taste

Preparation

  1. Peel and mash bananas with a fork until smooth, mix with spelt flour, baking powder, optional vanilla or cinnamon, and salt, add plant-based milk, and whisk to a smooth batter; let rest for 5 minutes

  2. Preheat the waffle iron to low or medium heat and brush with vegan butter

  3. Scoop the batter onto the center of the hot waffle iron, filling about three-quarters of the surface, close the lid, and bake for 3-4 minutes

  4. Stack the cooked waffles on a plate to keep warm and serve with fresh berries, powdered sugar, or maple syrup if desired

Notes

  1. Yields about 5 heart-shaped waffles

  2. Store cooled waffles in the refrigerator for up to 3 days
