Vegan Brunch Crispy Waffles

Ingredients

Dry

  • 1 1/2 Cups Spelt flour
  • 1 Tbls flaxmeal
  • 3 Tsp Baking powder

Wet

  • 1 Tbls pure maple syrup
  • 2 Tsp pure vanilla extract
  • 1/4 C Apple purée
  • 1 1/2 C Almond milk

Preparation

  1. Combine all dry ingredients in a bowl.

  2. Whisk all wet ingredients together.

  3. Add the wet ingredients to the dry ingredients and gently whisk.

  4. Leave for a few minutes while you heat your waffle pan.

  5. Brush a little oil on and use 1/4 cup scoops, cook for approximately 2 minutes each side, or until browned.

  6. Place on a wire rack while you cook the rest.

Tips

  1. Eat straight away or place in an airtight container and store in the freezer.

  2. Take out and heat up in toaster to enjoy.
