Homemade Vegan Cinnamon Rolls

Ingredients

  • 460g strong flour
  • 70g muscovado sugar
  • 100g vegan margarine
  • 240ml plant milk
  • 2 tsp easy bake yeast
  • 1 tsp salt
  • Optional grated zest of 2 oranges
  • Raisins and sultanas
  • Orange juice

Filling

  • More sugar
  • Cinnamon
  • About 30g margarine

Preparation

  1. Soak raisins and sultanas in orange juice overnight.

  2. Heat the milk to lukewarm and combine everything together in a large bowl or mixer with a dough hook.

  3. Bring together to a soft dough and knead for 10 minutes until elastic.

  4. Leave to rise in an oiled bowl, covered until doubled in size.

  5. Roll out to a rectangle about 30x40cms.

  6. Melt the extra margarine and spread it all over the dough.

  7. Sprinkle with sugar and then cinnamon.

  8. Roll into a long sausage from the long edge.

  9. Cut into 12 pieces and place in a greased baking tin.

  10. Leave to rise again for 30 mins to 1 hour.

  11. Bake at 180C for 20 minutes or until golden.

  12. While still warm drizzle with icing or a syrup made with sugar and orange juice.

Tips

  1. Once you have the basic dough you can change the filling to suit your mood or season, such as using cranberry sauce with orange zest.
