Wild Blueberry Loaf Cake

Ingredients

  • 1 cup wild blueberries
  • 1 1/4 cups flour
  • 1 tsp cinnamon
  • 1 tsp vanilla powder
  • 2 tbsp lemon juice
  • 1/2 cup plant-based milk
  • 2 tsp apple cider vinegar
  • 2 very ripe bananas
  • 1 cup coconut sugar
  • 1/2 cup coconut oil
  • 1 tsp baking soda
  • 2 tsp baking powder

Preparation

  1. Mix 1/2 cup plant-based milk with 2 tsp apple cider vinegar and set aside.

  2. Dust 1 cup wild blueberries with flour and set aside.

  3. Preheat the oven to 350F.

  4. Grease a loaf pan.

  5. Mix the dry ingredients together really well.

  6. Mix the wet ingredients together.

  7. Add the wet ingredients to the dry and mix well.

  8. Fold in the blueberries.

  9. Bake for 1 hour or until the center is cooked.
