Wild Blueberry Loaf Cake

Ingredients

  • 1 cup wild blueberries
  • 1 1/4 cups flour
  • 1 tsp cinnamon
  • 1 tsp vanilla powder
  • 2 tbsp lemon juice
  • 1/2 cup plant-based milk
  • 2 tsp apple cider vinegar
  • 2 very ripe bananas
  • 1 cup coconut sugar
  • 1/2 cup melted coconut oil
  • 1 tsp baking soda
  • 2 tsp baking powder

Preparation

  1. Dust the wild blueberries with flour and set aside.

  2. Mix the plant-based milk with apple cider vinegar and set aside.

  3. Preheat the oven to 350F.

  4. Grease a loaf pan.

  5. Mix the dry ingredients together really well.

  6. Mix the wet ingredients together.

  7. Add the wet ingredients to the dry and mix well.

  8. Fold in the blueberries.

  9. Pour the batter into the prepared loaf pan.

  10. Bake for 1 hour or until the center is cooked.
