Vegan Peach Cobbler Bars

Ingredients

Peach jam

  • 2 cups peaches – diced (3–4 peaches)
  • 2 tbsp chia seeds
  • 1 tbsp maple syrup or sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch or arrowroot starch

Crust

  • 1 1/2 cups oat flour
  • 1 cup oats
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/2 cup almond butter
  • 3–4 tbsp vegan milk

Preparation

  1. Add peaches to a saucepan over medium-low heat and partially mash using a potato masher or fork.

  2. Add all remaining jam ingredients and stir to combine.

  3. Cook for about 10 minutes until peaches have started to break down.

  4. Remove from heat and let cool and thicken for 5 minutes.

  5. Add all crust ingredients to a bowl and mix until fully combined, using hands if necessary.

  6. Press about half of the crust into a lined 8x8 baking dish.

  7. Pour jam on top.

  8. Crumble the remaining crust on top of the jam.

  9. Bake for 25-30 minutes.

  10. Let cool for a full hour in the refrigerator before serving to allow the jam to fully set.
