Berry Crumble for Two
Ingredients
Crust
- 1/4 cup almond flour (24 grams)
- 1/3 cup oats (30 grams)
- 1/4 tsp baking powder
- 2 tbsp maple syrup
- 1 tbsp coconut oil
- dash of vanilla and salt
Filling
- 1 1/2 cups berries (150 grams)
- juice and zest of 1/4 lemon
- 2 1/2 tbsp coconut sugar
- 1 1/2 tbsp cornstarch
- dash of vanilla and salt
Preparation
In a bowl, combine all of the crust ingredients and mix them well.
In a separate bowl, combine the filling ingredients.
Transfer the filling ingredients to a pan and cook the berries over medium heat for 4-5 minutes, until they start to soften and release their juices, and the mixture starts to thicken.
Grab two small oven-safe ramekins and split the berry mixture evenly between the two.
Top them with the crumble.
Bake the crumble in the oven for 15-20 minutes at 400°F/200°C, until the crust becomes golden in color.
Tips
Once the crumble has baked, let them cool for a few minutes, top with dairy-free vanilla ice cream, and enjoy!
This recipe makes two servings and can be doubled or tripled to enjoy with more friends.
