Vegan Gluten-Free Pecan Pie
Ingredients
Crust
- 215 g oats
- 125 g almond flour
- 100 g plant-based butter
- 3-4 tablespoons maple syrup
- 1 teaspoon cinnamon
- a pinch of salt
Filling
- 60 g plant-based butter
- 50 g coconut oil
- 100 ml maple syrup
- 40 g coconut sugar
- 5 tablespoons almond butter
- a pinch of salt
- 250 g pecans
Preparation
Preheat oven to 350°F and grease a 9-inch pie pan.
Mix crust ingredients until combined, press into the pie pan, and bake for 10-15 minutes until lightly golden.
In a saucepan, melt the plant-based butter and coconut oil over medium heat.
Stir in maple syrup, coconut sugar, almond butter, and salt until smooth and heated through.
Add pecans to the filling mixture and stir to coat.
Pour the filling into the pre-baked crust and bake for 30-40 minutes until set.
Allow the pie to cool completely before serving.
