Vegan Gluten-Free Caramel Apple Pie Bars

Ingredients

Crust

  • 1 1/2 cup almond flour
  • 1/2 cup cassava flour
  • 1/3 cup melted vegan butter
  • 1/2 tsp salt
  • 2 tbsp maple syrup

Apple filling

  • 2 cups of apple, peeled and diced (2 big apples or 3 small apples)
  • 1/3 cup water
  • 2 tbsp coconut sugar
  • 1 tbsp maple syrup
  • 1 tsp apple cider vinegar
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 3 tsp tapioca starch

Caramel

  • 3/4 cup coconut cream (solid part only)
  • 1/4 cup coconut sugar
  • 1 tbsp natural peanut butter
  • 1 tsp vanilla
  • 1/2 tsp salt

Preparation

  1. To make the crust, mix together all the dry ingredients, then add the butter and maple syrup and mix until combined. Press about 3/4 of the dough into an 8x8 pan lined with parchment paper, reserving 1/4 of the dough to use as topping later. Bake at 350° for 10 minutes cool and set aside.

  2. While the crust is baking, start to make the apple filling. Peel and chop the apples into small pieces. Next, mix the spices, salt and tapioca starch together in a bowl and coat the apples with the mixture. Add all the wet ingredients and apples to a saucepan and cook at medium heat for about 8-10 minutes until everything has thickened.

  3. Pour the apple mixture onto the crust and the reserved dough from the crust and bake for 20 minutes.

  4. To make the caramel, add all the ingredients to a small sauce pan. Bring to a boil over medium heat and then slowly lower the heat and simmer for about 10 minutes to let it thicken. Remove from heat. If there is excess liquid on top from the coconut cream, carefully drain that, then let it cool for 5 minutes and stir again.

  5. Drizzle the caramel over the bars and enjoy.
