Vegan Gluten-Free Raspberry Oat Bars

Ingredients

Oat crust

  • 1 1/2 cup almond flour
  • 2 cups oats
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/2 cup vegan butter

Raspberry filling

  • 2 1/2 cup raspberries
  • 3 tbsp sugar
  • 2 tbsp cornstarch
  • 4 tbsp lemon zest (zest from about 1 lemon)
  • 1/4 tsp vanilla

Preparation

  1. Combine all of the crust ingredients in a large bowl and mix them well.

  2. Transfer half of the mixture to a baking dish.

  3. Mash up the raspberries and add the rest of the ingredients until everything is well combined.

  4. Add the filling to the baking pan.

  5. Add the rest of the topping and distribute it evenly on top of the filling.

  6. Bake the raspberry oat bars for 40-50 minutes at 400°F, or until the top layer is golden brown.

  7. Let the bars cool, cut them up and enjoy
