Vegan Raspberry Oatmeal Bars

Ingredients

Crust

  • 2 cups oats
  • 1 1/2 cup almond flour
  • 1 cup coconut sugar
  • 1 tsp baking powder
  • 1/2 cup vegan butter

Filling

  • 2 1/2 cup raspberries
  • 3 tbsp coconut sugar
  • 2 tbsp cornstarch
  • 4 tbsp lemon zest
  • 1/4 tsp vanilla

Preparation

  1. Combine all of the crust ingredients in a large bowl and mix them well.

  2. Transfer about 3/4 of the mixture to a square pan and save the rest for the top layer.

  3. Add raspberries to a large bowl and mash them up.

  4. Add the remaining filling ingredients to the raspberries.

  5. Transfer the filling to the pan.

  6. Top the bars with the remaining 1/4 of the crust mixture.

  7. Bake in the oven for 1 hour at 350°F or until golden brown.
